The other evening me and my partner were planning how we would use the rest of the ingredients we had left over from a weeks worth of dinners. I would read the names of different food items in the cupboard and he did the same from the fridge.
- Jus-Rol Light Puff Pastry Sheet
- ASDA Extra Special Pork Fillet Medallions
- ASDA Edam Cheese Slices
- A loose onion
- Seasonings (Salt, Pepper, Lemon Juice and Paprika)
Fry the pork medallions for 3-5 minutes or until they are just turning golden. Season with salt, pepper, paprika and lemon juice. Leave to cool on some clean kitchen roll lined bowls. Press dry the medallions using kitchen roll.
Chop 1/4 of an onion finely.
Roll out the pastry sheet and divide into six squares. Place edam cheese on top of square of pastry and then put a pork medallion in the centre. Sprinkle onion on the pork and cover with another slice of edam cheese. Finally pull the corners of the pastry together and stick them together. Then glaze the top with egg.
Put in the oven for 20-25 mins or until crispy.
We served the pork bakes on a salad with some potatoes and sweet chilli sauce.
